I've read through the novel and I can't seem to decide on a moral for the story.

A moral is the same thing as the main message.

Did you come across one that you thought was the main message?

I don't think that any good story has a "main message". Such things are best left to allegories and overly obvious, ham-fisted storytelling IMO. While I don't think that American Gods is NG's best work, I'd definitely say that boiling it down to some message or moral would be doing the novel a disservice.
