I usually put coconut milk in the rice, not in the curry itself. Cook rice in coconut milk instead of in water. Yum.

regarding the whole coconut in curry thing - if i'm having indian curry i like the non-creamy non-coconutty ones - bhuna is probably my favourite. but on the other hand i do really, really like thai green curry. mmmm.... and i don't think i've ever had a chinese curry.. something to be remedied methinks ____________________________________________________ Did you know? I'm not so keen on Chinese curry - although I probably haven't had one somewhere really nice. I find them just spicy, without all the flavour that Indian curry has to go with it.

oh that doesn't sound so good then.. i'm not a huge fan of chinese food in general, i find it a bit too sticky and sweet. i adore indian food tho, and thai..
