not nearly as many photos as Domi:
butternut squash! a vegetable i had never used before! but i got to use a very large knife, which is always good.  then the stirring and adding stock. and the stirring and adding stock. and...zzz....  check the things roasting. made the kitchen smell good. i added some parmesean.
 but basically it was butter, spring onions, garlic, veggie stock, squash and rice! super easy! Dom and Punk, both of your picture sets look delicious! I love risotto, and I love butternut squash. I do think you missed out by skipping the sage, though, Dom. I don't like butternut squash, but I do want to try making risotto, so I have to choose a different recipe. I'm looking at either Vegetable Risotto, Mediterranean Risotto, or Risotto with Garlic. (with veggie broth instead of chicken where necessary)
