i added some parmesean. Smile

but basically it was butter, spring onions, garlic, veggie stock, squash and rice! super easy!

Mmm.

Dom and Punk, both of your picture sets look delicious! I love risotto, and I love butternut squash. I do think you missed out by skipping the sage, though, Dom. Fresh sage in a squash risotto is transcendent.

I don't like butternut squash, but I do want to try making risotto, so I have to choose a different recipe. I'm looking at either Vegetable Risotto, Mediterranean Risotto, or Risotto with Garlic. (with veggie broth instead of chicken where necessary)
