Can I request that the next challenge be a summer dish? Not that squash risotto isn't great, but it is rather wintery. Because of how, you know, squash is a winter vegetable, and risotto involves standing over a hot stove stirring.

i was thinking gnocchi but that may also be winter food.

What about potato salad?

Everyone has their own recipe, and I'd like to see someone else's, and it is usually fairly easy.

I'd suggest tabbouleh, because it is so delicious, but it's a lot of chopping, and you specified easy.

Ha! I was a vegan for eleven years, and I managed to escape salad for most of it! You'd be amazed how many junk food items labelled as "bacon flavoured" are actually vegan...

(Am an evil omnivore, now, though, and I do eat salad these days, and enjoy it.)

Does potato salad actually count as salad? Or is it just cold food?

this thread is for a cooking challenge, kinda like the creativity challenge one.

once a week (or so) someone suggests a food type to try, and then people make and photograph it.

last week was rissoto...there is still some debate about this weeks options.
